Fred Loimer follows the Bioydnamic calendar and adhere's to the world's highest organic growing standards in his vineyards and social standards in his winery.  The fruit for his sparkling wines is grown according to these standards in the villages of Langenlois and Gumpoldskirchen.  Fred's sekt is made in the traditinal method, with the second fermentatoin taking place in bottle. All fruit is hand harvested, and whole cluster pressed, with only the use of the free-run juice, or "cuvé" (2.000 liter from 4.000 kg grapes).  Spontanious fermentation is carried out partly in wood, and malolactic conversion is allowed to reach completion.  The base wine is bottled at 10 month with a minimal addition of sulfur (20mg/L).  Following the second fermentaton the wine rests 12 months on its lees before dégorement.

Wine Production

Harvest: selective harvest by hand in 20kg crates beginning and middle of September;
Maceration time: no, whole cluster pressing (yield: 50 liter from 100 kg grapes);
Pre-clarifying: sedimentation 36 - 48 hours;

first fermentation: Spontaneous fermentation in stainless steel tanks at 18-22° C,  2 - 4 weeks;
Aging: in stainless steel tanks on fine lees for 6 months;

second fermentation:   Bottling: July 13, 2015;
Lees aging: 10 months and more;
First disgorgement date: may 17, 2016;
Dosage: 6,5 g/l;
SO2 addition: 20 mg/l after malolactic fermentation - before bottling, 0 mg/l at disgorgement, SO2: 10 mg free/ 30 mg total;
Bottle aging: recommended between 6 & 18 months after disgorgement;

Tasting Notes

Clear, bright and decidedly pink with a fine and persistent mousse. A delicate nose of wildflowers, fresh strawberries and bay leaf is framed by gentle spice. On the palate, the wine’s floral character is supported by hints of toasted bread. The fine perlage creates a supple mouthfeel that is complimented by invigorating acidity. A wine of great tension, freshness, and finesse. 
 

Food Pairing

A high quality sparkling wine with class and finesse, Loimer Extra Brut is a wonderful aperitif or marker of special occasions.  It also makes for a stunning first course pairing.
